I always thought that when I became a real person (aka had a job) the clouds would part, the sun would shine through, and I would miraculously work less. Alas, that was not the case. This past year has brought about me moving to a new city, moving within an apartment complex, new friends, new jobs, and new loves (yes that was plural). One thing that has not changed is my love for cooking; however, my love for posting things has yet to keep up the pace :)
I have been slightly obsessed with Cauliflower; Ricing it, mashing it, roasting it. This recipe was particularly delicious and I think lends way to a few different variations that I'm ready and excited to try. I've made this twice now and it's definitely something that is super delicious when warm. I searched a couple of recipes before landing on this combination of ingredients.
Roughly speaking, I used:
* 1 medium cauliflower cut into florets
* 6 pieces of Cherrywood Bacon cut into 1/2 inch pieces
* 2 green onions
* 3 heads of garlic
I tossed all the ingredients into a pan and roasted for 35 minutes at 400 degrees F. I used no oil because the bacon will provide the fat to help get the cauliflower crispy. Once it was all said and done, I topped it with some shaved parmesan and Sriracha. I'm not sure why the hot sauce was added, but the flavor combo really came together. One of these days I am going to add dried cherries or raisins...any other suggestions???
